I enjoy baking cookies and sharing my favorite recipes with my family and others. For many years I have sent a large assortment of Christmas cookies with my husband to his office to share with his fellow employees. Here is a recipe for a favorite Christmas cookie, Chewy Almond Horns. From our home to yours, enjoy!
Chewy Almond Horns (makes 4 dozen)
16 ounces Almond Paste
1 cup sugar
2 egg whites
½ cup confectioner’s sugar
Preheat the oven to 400*F. Remove the almond paste from the can and break off small pieces with your fingers into the bowl of an electric mixer. Cream the paste, sugar, and egg whites until just combined. Scoop out a tablespoon of dough, rolling between your palms and forming into a 3-inch log shape. Roll in confectioners sugar and then form the log into a crescent shape and place onto ungreased cookie sheets. Bake for 8 minutes. Watch carefully. Cookies will inflate, crack on top and turn slightly golden when done. Transfer to racks to cool.
